Dr. Scheffler is a Research Assistant Professor at the University of Florida in Gainesville Florida with the Department of Animal Sciences. He specializes in meat science with the ultimate goal of identifying management practices that reduce the cost of meat production while maintaining the quality of the end product. Dr. Scheffler will be working on the TARTARE Beef Team.
